Cookies & Cream Chocolate Cake

This cake consists of three layers of chocolate sponge, stacked together with chocolate ganache filling. It is frosted with a chocolate-oreo buttercream and the white swirls are vanilla buttercream. The drip is a thinned chocolate ganache. The secret ingredient to making the most flavourful chocolate cake is coffee! Always add a spoon or two of instant coffee (or freshly brewed expresso if you have the time) to spice up your cakes.

Red Velvet Cake with Cream Cheese frosting

While researching how to make a red velvet cake, I discovered the fascinating science behind the original red color-
Anthocyanin (pigment in cocoa powder) turns red in acidic conditions which is why non processed cocoa powder and vinegar (buttermilk) are essential ingredients for this recipe. However nowadays it is very difficult to find natural cocoa powder and so red food coloring is needed to get that vibrant shade. The little hearts are made from couverture  white chocolate. The layers came out very sturdy which was plus since the cream cheese frosting was a bit tricky to frost with. Overall it is a delectable treat and a must try!

Unicorn themed chocolate cake with cream cheese filling and Vanilla Buttercream frosting

I made this for my sister's 11th birthday and the disasters that occurred in the process were comical-
Due to the summer heat in India, the cream cheese frosting refused to set, so the cake was chucked into the freezer. After which I dropped the frozen cake two times on the table before decorating. Luckily the end result was pretty good so I was satisfied. 
The tricolor layer piping method to create the gradient on the swirls was a new technique I tried out.

Mirror glazed Simple Chocolate Cake with Vanilla Buttercream frosting

This was my first step into intermediate level cake making. Once this cake was finally ready, I felt like I was on top of the moon. 
This is a two layer stacked cake with American buttercream and a simple corn syrup mirror glaze set with agar agar.

Nutella Brownie Cookies 
April 2021
Since the second wave of Covid introduced a home bound summer, my friend and I resorted to baking together virtually and decided to test out these Nutella brownie based cookie recipe that one of my favourite baking channel posted. Making these was definitely time consuming as we had to prepare two separate doughs for the outer and inner layers but the result was worth it.
